Kitty's Calves Liver & Onions

Calves Liver & Onions with Gravy
My mom used to make the best liver and onions ever!

Ingredients:
1 pint calves liver (store markets it pints by the chicken dept)
3 large onions (Vidalia's or spanish are the best)
1 cups of flour
1 tsp paprika
salt and pepper to taste
dash of garlic powder
1/2 cup of Crisco (I love using Crisco, seems to give fried foods a better flavor and has a better heat tolorance.)
1 large cast iron skillet

Without gravy: Add your Crisco to your skillet. Make sure grease is hot before adding your liver. (a must do to get the best quality of frying. Place your flour on a plate, or in a 1 gal plastic bag. Add your flour, paprika, garlic powder, salt and pepper to your flour. Mix. Dredge your meat through flour, both sides. Add to skillet, lowering heat to about medium. When liver looks good and brown on both sides, remove liver from the skillet to the side on plate. Now, slice your onions about 1/4" wide. Add about 3/4 cup of water to the skillet. After water starts boiling, return liver to the skillet along with all your onions. Salt and pepper the onions and cover. Let boil for about 30 min at a low heat. Your meat will continue to cook and your onions will cook and soften. Serve onions on top of the liver. Delicious!

With Gravy: Some people like gravy with their dinner! To make gravy, remove the liver and onions to the side. In a cup, add 3 tablespoons of flour to a cup. Slowly add warm water to cup stirring constantly with a fork. Keep stirring untill lumps are gone. Place cup of flour water back to skillet on high heat. When mixture starts to boil, lower heat to about medium. When mixture starts to boil, it will thicken. Add alittle more salt and pepper to taste. Add a little more water to mixture for thinner gravy. Now, add the liver and onions back to skillet and let simmer for about 10 minutes. Now you have liver and onions with the gravy!!
Best served with either rice or mashed potatoes! Enjoy
