Cathy's Cabbage Rolls

Cathy's Cabbage Rolls
Ladies, here it is! I added a little Sour Kraut to my recipe!

This will make 12 large rolls or 24 medium rolls
Roasting pan with a lid or a large slow Cooker-6 quart

1 large can of tomatoes
1 large can of crushed tomatoes
1 large can of Sour Kraut
1 can of tomato juice
2 large heads of cabbage
1 cup of rice
1 lb sausage, (use reg ground sausage) 1 lb ground beef
1 lg onion
1 egg
3 tablespoon minced garlic
salt, pepper,
1 tsp paprika , and then make them into oblong balls. You can judge them by the size of your cabbage leaf. Place oblong meatball onto cabbage leaf. Start rolling like you would a burrito, tucking in the sides as your roll so the meatball is totally covered. Once you get them all rolled, prepare your cooking pan.

In your roaster or slow cooker, add enough tomato juice to cover the bottom of pan. Start placing your roll in an orderly fashion. Making sure they are rolled tight and placed snugly together so they wont fall apart during the cooking process. After your first layer of rolls cover the bottom of pan, put a thin layer of kraut across the layer, and crush a few canned tomatoes across the bottom layer also. So, in between layers, you have layers of kraut and tomatoes. Keep making your layers of rolls till the meat is all gone. Ok, all you need to do now, is pour the rest of your tomatoes, crushed tomatoes and canned along with your kraut and tomato juice over the top of the rolls. Move everything around so everything is evenly distributed.

Cook rolls in oven at 325 degrees

Core out cabbages so you don’t have the large thick pieces on your leaf when you roll it. Bring to a boil 1 large pot of salted water. Big enough to drop a head of cabbage into. Drop your cabbage into the water for about 5 min. (this will soften your leaves making it easier to roll) After 5 min remove cabbage and let cool so you can remove the leaves one by one. Do the same to the other cabbage. Remove and let cool. After they have cooled, start peeling off the leaves and stacking them like a deck of cards.

Add your sausage and ground beef to a large bowl. Dice your onion into small pieces and add 1 cup of rice, add your garlic, salt and pepper, egg and paprika. Pour about 1/4 can of your crushed tomatoes into the mix also. Now mix like you would a meatloaf. By then your leaves should be cooled and stacked.

Roll the meat into large ballsees for 2 hrs. Using slow cooker, cook them on low for 4 hrs. Be sure to remove them carefully from pan as not to tear them up. You will have lots of juice and kraut and tomato juice to place over the rolls and mashed potatoes. Makes a beautiful plate!!! Please enjoy!!! You can freeze the rolls also. Place the in freezer bags along with juice.

Twice cooked rolls are even better!!!!
