Aunt Penny's Salsa

I love salsa and there are alot of ways to make it, but this is my recipe

3 -6 serrano chilis
1 large white onion (or red)
grated zest and juice of 2 limes
8 firm ripe Roma tomates ( can use any kind but Roma's are meaty)
large bunch of cilantro
1/4 teaspoon sugar
salt to taste
use 3 chilis if you like mild or 6 if ya like er hot...I use 5....lol

Use a fry pan and scorch chilis till skins blister and scorch or scewer them and roast them over open gas flame on stove (if you have gas) a few seconds (do not cook flesh)

Place in a plastic bag and let set for 20 minutes
Finely chop onion and place in a bowl with lime juice and rine, lime will soften onion

Remove chili's from the bag and peel off skins, cut off stalk and with a knife..seed them ( be careful and was your hands throughly when done handling or use plastic gloves to seed and handle ...just don't touch your eyes or nose while handling them) chop the flesh then set aside. Cut small cross in the end of tomato's and pour boiling water over them and let set about 3 minutes, then dunk them into cold water to make them peel easier (peel throughly)

Peel tomatoes and dice into a bowl, add onion and lime mixture. Add chopped cilantro and diced chilis with sugar and salt and mix till blended well. Stick in the refrigerator for 3 or 4 hours to meld flavors...

This is alot of work but so worth it..will keep for days in refrigerator if not eaten right away with tortilla chips or on food
